Are you an aspiring chef? Do you love to cook or have a special dish that you want to show off? Well, starting this month I am asking my readers to add and share their favorite recipes here. All you need to do is go to the comment section below and begin adding your recipe! When you have finished, simply publish your comment! At the start of each new month I will make a new Reader Recipe post that you can access and continue posting to. Your recipe(s) will be archived by month. At the end of each month I will add a ‘table of contents’ to serve as a quick reference and will be displayed as the first post when you visit this section.
Your recipes can be about anything from an appetizer to a main course. Give the readers information and suggestions of what to possibly serve along with this dish or maybe suggest what wine would go best with this meal. I have had a few people asking me about my Alfredo...so here goes...enjoy!
Wicked Easy Alfredo
1 1/2 C chicken broth (make your own if you can)
3 oz of plain cream cheese
1/2 C parm cheese
pinch of black pepper
1/4 C light cream
4 - 6 minced garlic cloves (I use a Pampered chef garlic crusher) If you want stronger garlic flavor, then add more!
Using a whisk over medium heat, blend all of the ingredients until it is creamy and all of the cream cheese has melted. Simmer and stir frequently for about 5 mins.
In a separate cup mix together 1 tbls of corn starch with a little water. Add this to the cheese mix and let it thicken up a bit.
Serve over your favorite pasta! Sometimes I will poach a few broccoli crowns and add them to the sauce before pouring over the pasta.
