One of the best gifts I received this Christmas was a Panini maker from my sister-in-law and mother-in-law THANK YOU again ladies! Apparently, sometime during the last 12 months I blurted out I wanted one. I have no memory recall anymore! I think I lost it during childbirth.
I have a new ‘quick meal’ maker that can now stand up next to my staples of pasta and sauce or tacos! I have been experimenting with a bunch of different recipes and not one of them has been bad! This is a really good thing. Better yet, my whole family loves whatever I throw in between two slices of Tuscan Bread, French Bread etc…..I am getting to make nice healthy food that is quick with no comments from the peanut gallery. LOVE IT!
I always experiment on my family with new foods because I am a recipe-a-holic and have a bookcase designated for cookbooks. I never ever have all the ingredients for what any recipe lists. That is when I sit in front of the bookcase and start searching for inspirations and having a general idea of what is in my pantry. Then I try and figure out what foods I have and what would compliment each other and go from there.
Some of the panini’s I have made so far:
Emeril’s seasoned chicken breast, with onion, red peppers, lettuce and Monteray cheese.
Rosemary, garlic and thyme chicken breast, with romaine, American cheese and brushed with olive oil.
Sliced turkey breast, minced onions, lettuce, tomato and hints of red peppers.
I am thinking about trying: Cooked chicken that was marinated in Caesar dressing, chopped artichoke hearts, romaine on French Bread. Ok, are you hungry now?
You see, no matter what you put in between your bread and use this awesome gadget, you can’t go wrong! It tastes fabulous! The creations are endless and yummy! They are so easy to use and even easier to clean. If you are on the go like we are, and need some quick meals….YOU must get one of these Panini maker! You will wonder how you ever survived without one like me.

I also have a panini maker and love it. Another great recipe if your craving chocolate and who doesn't is take two slices of cinnimon raisin bread and butter outsides and fill the inside with Nutella. Absolutely delicious...
Susan you may have just given me a new idea for a quick dessert! I recently had a dessert that had Cinnamon, Waltnuts and Chocolate and the three of those together were really good! I am going to your suggestion out! Thanks for sharing
